Basic Purpose: Responsible for preparing meals and supervising the kitchen's operations.

Follow HACCP Procedures for all food, recording food temperatures.

Proper storage of all food, produce, dry goods and items dished up for meals are properly covered, labeled and dated. Maintaining the cleanliness, proper sanitation, and security of all work areas and equipment. *

Overseeing kitchen staff in food production and directing work in absence of the dietary manager/supervisor *

Food Safety and sanitation procedures are followed daily ie: food storage, cleaning rags, food transport, and organization of walk in refrigerators/freezers, HACCP procedures and documentation.

Observing appropriate safety guidelines: HAZCOM, universal precautions.
